cooking spree

i did nothing but cook at home last weekend. i got to prepare 3 that saturday: pork steak for lunch, banana bread for merienda, and embutido for dinner.

all recipes from panlasang pinoy. easy peasy! :) note: i did tweak the recipes a bit.

PORK STEAK

Ingredients:
6 pieces pork chops
5 tablespoons soy sauce
6 pieces calamansi
1/2 cup cooking oil
2 medium onions, sliced
1 1/2 cups water
1 tablespoon granulated white sugar
Salt and pepper to taste

Cooking procedure:
1. Combine pork chops, soy sauce, and calamansi juice in a large bowl or container. Marinate for at least 1 hour.
2. Heat a pan then pour-in cooking oil.
3. Pan-fry the marinated pork chops in medium heat for 3 to 5 minutes per side.
4. Remove excess oil. Pour-in the remaining marinade and water and let boil. Simmer for 45 minutes or until the pork is tender. Note: I added water as it tends to dry out.
5. Add-in the sugar, salt, and pepper then stir.
6. Put-in the onions and cook for 3 minutes more.
7. Turn-off heat and transfer to a serving plate.
8. Serve.

BANANA BREAD

Ingredients:
1 cup banana, mashed
1 cup sugar
2 pieces raw eggs
1/2 cup cooking oil
1 tsp teaspoon salt
1 tsp vanilla essence
1 1/2 cups all purpose flour
1 tsp baking soda

Cooking procedure:
1. Combine all the dry ingredients starting with the flour, sugar, salt, and baking soda.
2. Mix the dry ingredients thoroughly until everything is evenly distributed.
3. Add the other ingredients (eggs, mashed bananas, cooking oil, vanilla essence) then mix well with the dry ingredients until a batter is formed.
4. Grease the loaf pan and pour-in the mixture.
5. Preheat oven at 350 degrees Fahrenheit then bake the mixture for about 45 minutes.
6. Remove from loaf pan from the oven then allow to cool down for a few minutes. Transfer the banana bread on a serving plate.
7. You may put the bread in the fridge to cool or serve immediately.

EMBUTIDO
(i halved all proportions just in case magkamali ako. it turned out delish!)

Ingredients:
2 lbs ground pork
12 pcs vienna sausage or 6 pcs hotdogs, cut in half lengthwise
3 pcs hard boiled eggs, sliced
1/2 cup sweet pickle relish
1/2 cup tomato sauce
2 pcs raw eggs
2 cups cheddar cheese, grated
1 cup red bell pepper, minced
1 cup green bell pepper, minced
1 1/2 cup raisins
1 cup carrots, minced
1 cup onion, minced
salt and pepper
2 cups bread crumbs (since i don't have a food processor, i just tore the bread)

Cooking Procedures:
1. Place the ground pork in a large container
2. Add the bread crumbs then break the raw eggs and add it in. Mix well
3. Put-in the carrots, bell pepper (red and green), onion, pickle relish, and cheddar cheese. Mix thouroughly
4. Add the raisins, tomato sauce, salt, and pepper then mix well.
5. Place the meat mixture in an aluminum foil and flatten it.
6. Put in the sliced vienna sausage and sliced boiled eggs alternately on the middle of the flat meat mixture.
7. Roll the foil to form a cylinderlocking the sausage and egg in the middle if the meat mixture. Once done, lock the edges of the foil.
8. Place in a steamer and let cook for 1 hour.
9. Place inside the refrigerator until temperature turns cold
10. Slice and serve.

@ 25 weeks

The baby now weighs nearly 1.5 pounds/660 grams and is approximately 13.5 inches/35centimeters long from crown to heel. He makes breathing movements but has no air in his lungs yet. At 26 weeks, fetal brain scans show response to touch. If you shine a light on your abdomen, your baby will turn his head, which according to researchers, means his optic nerve is working.

Your fingers, wrists and hands may be feeling achy and numb. The carpal tunnel in the wrist is swollen, as are many other tissues in your body. Nerves that run through the tunnel end up pinched, creating pressure that manifests itself as shooting or burning pain. Wearing a brace may help; so will taking vitamin B6. Talk to your doctor about other ways to cope.

weight gain during pregnancy

OK, so now dra. A tells me i have "advanced" most of the weight i am supposed to gain throughout this pregnancy. she says that since i started out "overweight" (OUCH!), we cannot follow the recommended 1 lb per week weight gain. ahay.

but when i talk to other young moms i know, palaging sinasabi sakin, "ay naku wala ka sakin, i gained 50 lbs!" "wala yan, me i was so big then i already forgot how much i gained!" "ano!? e parang tiyan mo lang lumalaki sayo e. basta kumain ka ng mabuti!"

you see, i used the same excuse with my OB. i told her, "e doc, di nga ako magana kumain e. at tiyan ko lang naman lumalaki, all my normal clothes still fit." kulang na lang sabihin nya sakin, "weh?? e ano yung 8 lbs weight gain mo last month, hangin!??" hahahahaha!

now i have cut down my rice intake (half rice na lang lagi and no rice sa gabi). i don't like sweets as much since i got pregnant (gosh! ako pa rin ito promise!) but since we get a steady supply of lindt and munz chocolates in the office, i just have the tiniest piece (having 1 piece of lindt lindor milk now). bulong lang sa ibog. have also cut down (stopped actually!) on eating mangoes (we have a steady supply from our neighbor grrr!). as much as possible, no cakes, cookies, cupcakes, etc. allowed in the house haha! but i did buy a box of globake's brazo de mercedes last week kasi wala talagang dessert sa bahy. wawa naman kami hehe

but i do believe that this is all for my benefit, since it'll be difficult to give birth when me or the baby become too big. here's hoping that all this cutting down makes me gain less weight next month (fingers crossed). :)

our dearest baby kr,

today we had our routine OB check up with dra. A. your dad and i were hoping to find out if you are a boy or girl (para matapos na ang mga pustahan ng daddy mo!) yun lang, you were too shy (again!). imagine, your right hand was partially covering your face, and your left hand was completely covering your genitals! secret pa rin ba talaga, anak? :)

but no worries, your dad and ma can wait. take as long as you need, dear kr. and when you are ready, we will be there. and trust that it doesn't matter much which gender you belong to, you will be loved. :)

meanwhile, dra. A switched to get a 4D scan and caught your smile!

new obsession

OK, so i have some time today to blog and not work (LOL).

i don't have the app on my iphone, but i'm so loving them.











like, i want an angry birds theme for my baby shower. or maybe the baptism. pls?

hiatus

since that last entry, i (we) have:

1. attended a fab 1st bday party at the valley golf main clubhouse



2. gone to our next OB appointment (no news on gender there, baby kr's still hiding!)

3. attended our friends' baby's baptism



4. fell sick for a few days



5. attended a hush-hush wedding



6. took a week's off from work (wala lang hehe) and did absolutely nothing (well, except fix things at home to free up space for baby kr's things)

7. made that yearly (?) trip to off the grill to watch a pacquiao fight (this time an uneventful one [except for the knockdown in the 3rd round] with mosley)



8. attended a mabuhay party for a dear (former) boss who retired recently



and they said i should slow down! :)
